Dr. Derek Dee’s laboratory (https://www.landfood.ubc.ca/derek-dee/) invites applications for a Postdoctoral Fellow (PDF) position to use advanced proteomics tools to characterize seed-storage proteins from legumes, focusing on pea proteins initially. The project involves characterising the composition and structure of pea proteins using LC-MS/MS and other biophysical tools, in order to understand how protein structural changes contribute to quality attributes of pea protein used in food. The effects of different varieties, protein extraction and fractionation conditions, and further processing steps will be examined. This project involves a planned collaboration with the National Research Council of Canada (NRC), subject to approval by the NRC. The NRC researchers will perform complementary functionality testing. Overall, the project seeks to enhance the use of pea proteins in plant-based foods.
Job Responsibilities:
- assist with grant proposals
- train and mentor students and other researchers
- coordinate with the UBC Proteomics Facility to perform LC-MS/MS analysis
- prepare manuscripts and present results at conferences
- prepare protein samples and conduct biochemical and biophysical analysis
- provide project management, and help write interim and final project reports for the funding agency
